Saturday is the meal to spend on. Three or four plated courses work for smaller groups; for ten or more, family-style platters keep the table loud and the courses moving. Tell the chef the bride's favorite foods, every allergy in the group, and the timing. If you're heading out after, dinner should wrap by nine.
If the dinner is a surprise, the planner handles everything with the chef directly. The chef can arrive while the group is at the track or out on the boat, so dinner is already underway when everyone walks back in.

If the group would rather do something than be served, book the chef to teach. Everyone gets a station, the chef walks the group through two or three dishes, and the night ends with a dinner made by the people eating it. Send the listing link before you book. The chef will want to know how many burners and ovens there are, whether there's a grill, and whether the house has enough plates, glasses and serving dishes for the whole group. Big rentals usually do. A five-bedroom lake cottage sometimes has eight forks. If the house has a deck and a grill, a cookout night is the easiest dinner of the weekend for everyone, chef included.
